Gloves
Most injuries can be prevented if operators wear the right protective clothing, in particular protective aprons and gloves. Make sure gloves fit properly. A suitable protective glove providing 3 or 5 digit protection, usually chain mail or overlapping metal discs, should be worn on the non-knife hand during deboning work. Protective gloves are also recommended for other hand knife operations particularly when an operator is inexperienced or under training. Wear appropriate gloves for your job. Use cut resistant gloves for high production jobs such as cutting and equipment cleaning operations. However, remember they are cut resistant, not cut proof - injuries can still occur. Chemical-resistant gloves when cleaning with or handling chemicals. Work gloves when handling garbage or working in storage areas. When you’re handling wide varieties of raw meat products, wear vinyl gloves over cut resistant gloves because this keeps your cut resistant gloves clean and usable longer. Be sure the vinyl gloves fit snugly to improve blade control. Change them between types of meat. Chain mail gloves must not be worn when a toothed blade is being used but roughened rubber gloves may add grip when handling some products. Even when removing or fitting blades there is a risk of serious cuts so care must be taken and protective gloves may be worn for these tasks.
